Most dishes include eggs and dairy but include options to make them vegan (as well as gluten-free) . With each recipe, the authors offer suggestions for side dishes (other recipes in the book) to serve with them. The recipes I tried (Sweet Millet & Chickpea Stuffed Peppers, Pepper-Crusted Mushroom Steaks, Mighty Mediterranean Minestrone) were simple to make, required easy-to-find ingredients and went over well with my family.
